Wildflower Wine

Ah, the scent of late spring…yellow, purple and green caressed with raindrops.

After almost 3 weeks of non-stop rain the lawn is lush and teeming with blossoms. A few afternoons relaxing in hammocks gives us an idea…rather than relentlessly fighting yard “weeds,” let’s let them thrive and turn them into wine!!

Wildflower Wine: 1 quart of dandelion, hawks weed, white clover and honeysuckle…rinsed and steeped in 1 gallon of boiling water for 20 min. Add citrus and ginger, sanitize your equipment, mix in 8 cups of sugar and wine yeast when the broth has cooled, bottle with airlock and ferment for 3 weeks!

The gardens are lush as well and our salad bed will provide greens for the summer. We fell our first large tree to provide more sun for the forest edge fodder.

The peonies pop on the very same day that 4 crowded young Phoebes finally take flight! Now that’s cause for explosive celebration:)
